Introduction :
From year 1998, taro was over produced in Da-Jai, farmers in the area were worried about not being able to sell all the crops. Master Ah-Tzong who was always interested in food innovations started using taro as pastry ingredients. Pastries were made from taro, in the shape of taro and the purple rosy colored pastry became the most beautiful blooming flower in Da-Jia since.

Soon after its local fame, media coverage of the pastry made it well known to the general public; thus another bright future of Da-Jia taro business was created by Master Ah-Tzong. Master was happy and often said that the success of taro cake not only created a bright future for farmers in Da-Jia, but also saved his own business: Shan-Mai Food Corp.

The famous Shan-Mai Da-Jia Crispy Taro Cake was first created by Master Ah-Tzong by using the selected taros from Da-Jia. The cakes were vegetarian, 100% handmade with pure vegetable oil. Taro abstracts which was about 45% of the selected taros were made into the cakes, thus the cake was with crispy skins, lots of filling, sweet but not filthy, and no artificial preservatives were added. The cake was also named “Shan-Mei Purple Rose” because of its layered rose petal like crust.
